摘  要:采用对氨基苯磺酸一盐酸萘乙二胺分光光度法测定了雪莲果块茎乙醇提取液对亚硝酸盐的清除率。考察了包括提取时间、提取温度、提取液用量、雪莲果与溶剂投料比及提取液与亚硝酸盐反应时间等试验条件对提取液清除亚硝酸盐的影响。研究结果表明,虽然雪莲果块茎提取液不易长时间保存,但对亚硝酸盐有较强的清除作用。以乙醇为溶剂、提取时间15min、提取温度70℃、提取液用量15mL、反应时间10min的雪莲果提取液对亚硝酸盐的清除效果最好。The nitrite scavenging activity of ethanol extraction from Yacon tuber was measured by spectrometry with sulfanilic acid and naphthalene ethylene diamine hydrochloric acid as reagents.The effect of extraction time,extraction temperature,the amount of Yacon extraction,the ratio of Yacon and ethanol and reaction time on the nitrite scavenging ability of the extract were discussed.The obtained results showed that the extraction of Yacon tuber was unstable and exhibited good nitrite scavenging activity.The optimal experimental conditions were as follows: refluxing temperature was 70℃,extraction time was 10min and Yacon extract amount was 15mL.
