不饱和天然油脂在氧化与环氧化反应历程中的差异

摘　　要：试验研究了5种不饱和油脂在氧化和环氧化过程中,不饱和结构与反应历程的差异。首先用化学和气相色谱法(GC)分析和表征了油脂过氧化值(POV)与双键的关系,氧化深度与碘值(IV)变化的关系(包括共轭化);其次试验着重考察了5种不饱和油脂在最佳环氧化条件下的环氧值(Eo)、碘值(IV)的变化。试验结果表明:不饱和天然油脂的氧化和环氧化反应有本质区别,环氧化是在双键上进行反应,而氧化是在双键旁的a-CH2上反应。The differences of five kinds of unsaturated natural lipoids in the oxidation and epoxidation reaction process were studied. Chemical and gas chromatography （GC） were used to analyze and show the relationship between the peroxide value （POV） and the double bond as well as the relationship between the oxidation＇ s depth and iodine value （IV） ＇s changes （including the conjugated one）. And the changes of the epoxy value （Eo） and iodine value （IV） of five kinds of unsaturated natural lipoids under the optimal epoxy condition were investigated. The results show that the oxidation and epoxidation of unsaturated natural lipoids are differente in essence. The epoxidation reaction is happens on the double bond while the oxidation reaction happens on the a - CH2 which is next to the double bond.
