摘  要:从虎皮鹦鹉(Melopsittacus undulatus)的粪便中分离得到一株产广谱细菌素的菌株,其细菌素产物对革兰氏阳性和阴性细菌均有较强抑制作用。经形态学、生理生化反应和16S rDNA分子方法鉴定,该菌株初步鉴定为干酪乳杆菌。用硫酸铵分级沉淀得到的细菌素粗提物,作温度、pH值、蛋白酶的敏感性测定,结果显示该细菌素经100℃处理10 min抑菌活性不变,当pH4.0时,对大肠杆菌和金黄色葡萄球菌的抑菌率分别达到99.06%和86.14%,并且对多种蛋白酶表现出敏感性。与Nisin标准品的抑菌效价对比,得到粗提物的效价为204.87 IU/mL。A strain of bacteria which can produces a broad-spectrum bacteriocin was isolated from the excrement of the Melopsittacus undulates.Its product could inhibit not only gram-positive bacteria but also gram-negative bacteria efficiently.Detecting its appearance,physiological and biochemical characteristics and analyzing 16S rDNA gene sequence homology,the strain of bacteria was identified as Lactobacillus casei.The sensitivity of rough bacteriocin to temperature,pH and protease was studied preliminarily.The results showed that inhibitive rate of the rough bacteriocin to Escherichia coli and Staphylococcus aureus was 99.06% and 86.14%,respectively,when the pH is 4.0.Incubating for 10 min at 100℃,its activity was still not affected.The bacteriocin showed sensitivity to several proteases.Comparing with the Nisin standard product's potency,the potency of the rough bacteriocin was 204.87 IU/mL.
