摘  要:目的了解大榭开发区餐饮业餐具消毒效果的卫生状况,为进一步制定有效的管理措施提供依据。方法 2006-2009年对辖区内的各类餐厅,码头、集体食堂和学校食堂的餐饮具进行监测,采用大肠菌群快速检验纸片,按卫生部"餐(饮)具消毒卫生标准"规定的方法进行检测。结果 2006-2009年大榭开发区餐具消毒效果监测共采样929份,合格602份,合格率64.80%。各年度平均合格率依次分别为49.21%、59.62%、66.53%、77.03%,呈现逐年提高的趋势。不同监测单位中以小型餐厅的年度平均合格率最低为43.92%,大型餐厅,码头、集体食堂和学校食堂的年度平均合格率依次为68.91%、70.98%、85.12%。不同种类餐具的平均合格率以碗类最低为52.06%,盘类,杯子,筷子,汤勺,其他类的合格率依次为57.21%、79.25%、72.46%、80.95%、52.08%。结论应进一步加强大榭开发区餐饮行业的卫生监督力度,实施分类监管模式,特别是强化中小型餐饮业的经常性卫生监督检查。Objective Through studying the status of tableware disinfection in Daxie economic development zone to provide references for formulating effective managing measures.Methods According to measures regulated in the hygienic standard for disinfection of dinner and drinking set,carry out tableware disinfection effects monitoring at various restaurants,docks,mess halls and school dining-halls from 2006 to 2009 with the employment of coliform bacteria detective paper.Results Among the 929 samples,602 are qualified,with a qualified rate of 64.80%.The average qualified rates are on a rise.The lowest average qualified rate of 43.92% is found in small restaurants among various units,while the lowest qualified rate of 52.06% is bowl among various tableware.Conclusion Hygienic supervision of catering,especially regular hygienic inspection of middle and small-sized catering at Daxie economic development zone should be further strengthened.
