摘　　要：介绍了紫苏叶、紫苏籽及其饼粕的化学成分,阐明其在食品、医药和其它工业方面的应用价值,总结了紫苏及其饼粕的国内外研究现状,并指出继续开发新的紫苏保健食品和医学制剂,努力提高紫苏植物资源的综合利用价值是其发展方向。This paper starts with a brief introduction to the chemical composition of perilla leaves,perilla seeds and its meal and then illustrates its applications in food stuff,medication and other industries.It summarizes the status quo of perilla research at home and abroad plus a brief analysis of its development prospects and points out that the developmental prospect of perilla is to develop its health-care food and pharmaceutical preparations and to make use of its comprehensive value.
