地中海鳎鱼幼鱼肌肉营养成分的测定

摘　　要：采用常规方法测定了地中海鳎鱼幼鱼的含肉率及其肌肉的常规营养成分和氨基酸、脂肪酸组成,并对其肌肉内重金属离子的残留情况进行了测定。结果显示:地中海鳎鱼含肉率90.3%,鱼肉鲜重含蛋白质14.6%、脂肪1.0%。17种氨基酸总量为13.80%,其中7种必需氨基酸总量为5.02%。9种脂肪酸中,饱和脂肪酸3种(46.21%),单不饱和脂肪酸2种(25.59%),多不饱和脂肪酸4种(28.18%)。重金属离子砷、铅、镉、汞含量均低于安全允许标准。The rate of flesh content,general nutritional composition and amino acids,fatty acids and heavy metal ions of young Solea senegalensis L. were determined. The results showed that the rate of flesh content for this fish was 90.3%. It＇s protein and fat contents were 14.6% and 1.0% respectively. Total contents of 17 amino acids and 7 essential amino acids were 13.80% and 5.02%. Three kinds of SFPs,two kinds of MVFA and four kinds of PVFAs were determined. The contents of heavy metal ions： As,Pb,Cd and Hg,were all very low,within the food safety ranges.
