摘  要:以不结球白菜为材料,研究了不同水分条件对其膳食纤维含量及理化特性的影响。结果表明:在水分过少(干旱)或过多(水涝)条件下,不结球白菜膳食纤维含量均低于对照;可溶性蛋白含量呈现先升后降的趋势;脯氨酸含量随处理时间延长而增加,且与胁迫程度呈正相关;保护酶SOD、CAT活性基本呈现先升后降的变化趋势,但变化规律有所不同;POD活性基本呈现上升趋势。A greenhouse experiment with nonheading Chinese cabbage was carried out to study the effects of different soil water conditions on the cabbage leaves' dietary fiber content and physiological and biochemical characteristics. The results indicated that compared with check treatment, the dietary fiber content was lower under little soil moisture(drought) or excessive soil moisture(waterlogging) ; The soluble protein content presented a trend of firstly increasing and then decreasing; The proline content increased with treatment time and exhibited a positive correlation with the stress;The activi- ties of SOD and CAT protective enzymes showed a tendency to firstly increase and then decrease though their changing patterns were somewhat different ; And the POD activity in all treatments basically presented an upward tendency.
