摘 要:[目的]研究甘薯煮食过程形成污染物的量和各污染物浓度。[方法]模拟生活中人们煮甘薯的过程并收集该过程中产生的6种潜在污染样品,分别测定这些样品的COD、BOD5、TN、TP、NH3-N的含量,得出各项指标确定甘薯食用过程的产污系数。[结果]生甘薯的COD、BOD5、TN、TP含量稍大于煮甘薯,而NH3-H含量则小于煮甘薯。[结论]该研究为制定食品加工过程产污系数提供了理论指导。[Objective] The research aimed to study the pollution quantity and various pollutant concentration produced from sweet potato in the edible processing.[Method] The cooking process of sweet potato in living was simulated.Six kinds of potential polluted samples produced in the process were collected.The contents of COD,BOD5,TN,TP and NH3-N in these samples were determined and each index was calculated,so as to confirm the pollution coefficient of sweet potato in the edible process.[Result] The contents of COD,BOD5,TN and TP in raw sweet potato were higher than that in cooked sweet potato.But the content of NH3-N in raw sweet potato was lower than that in cooked sweet potato.[Conclusion] The research provided the theoretical guidance for making pollutant-producing coefficient in the processing course of foods.
