菊花花青素的粗提及其对DPPH·的清除作用

摘　　要：研究菊花色素的粗提方法,比较常温浸提、恒温水浴、超声波和微波提取法的提取效果,及4种提取物与VC、VE的体外抗氧化能力。结果表明,提取效果以超声波提取法最佳,恒温水浴法次之,微波提取法最低。4种提取物中,以微波提取法体外抗氧化能力最强,在样品加入量为0.4 mL时其清除率是VC的95.2%,常温浸提法的150.2%,恒温水浴法的219.6%,超声波提取法的1 849.5%,VE的740.3%。从获得高抗氧化活性花青素粗提液角度考虑,微波提取法效果最佳。Crude extraction methods of anthocyanin from chrysanthemum were studied in this paper.The effects of four different extraction methods,including room temperature extraction,thermostat waterbath extraction,ultrasonic extraction and microwave extraction,on anthocyanin concentration were investigated,and the antioxidant capacity in vitro were determined and compared with vitamin C and E.The results showed that the anthocyanin concentration by ultrasonic extraction was the highest,those by thermostat waterbath extraction and room temperature extraction were lower,and that by microwave extraction was the lowest.Among the four extracts,the antioxidant capacity in vitro of microwave extract was the highest.The DPPH·（1,1-dipheny-2-picryhydrazyl free radical） scavenging rate of 0.4 mL microwave extract was 95.2% of VC,150.2% of room temperature extract,219.6% of thermostat waterbath extract,1 849.5% of ultrasonic extract and 740.3% of VE.Considering high antioxidation activity of anthocyanin rough extract,the optimum extraction of chrysanthemum anthocyanin was microwave method.
