摘　　要：介绍了瓶装芦笋罐头的加工工艺操作要点和产品的技术指标，指出生产加工过程中容易产生的质量问题和控制措施。This paper introduces the key points of the processing technology for bottled asparagus and the relevant product technical indexes. It points out the quality problems that are likely to occur in production and discusses some measures that may be adopted for quali ty control.
