摘 要:[目的]对川鲶、细鳞斜颌鲴、丁鱼岁3种优质淡水养殖鱼类的含肉率、肥满度及肌肉的营养价值进行了综合评价,为其推广养殖提供理论依据。[方法]采用常规的生化分析方法对3种优质淡水鱼类的营养组成进行了测定。[结果]3种鱼类的含肉率大小依次为:川鲶(68.47%)>细鳞斜颌鲴(67.12%)>丁鱼岁(64.04%),川鲶与丁鱼岁含肉率差异显著(P<0.05);肥满度大小依次为:丁鱼岁(2.33)>细鳞斜颌鲴(1.56)>川鲶(0.86)。川鲶、细鳞斜颌鲴、丁鱼岁的蛋白质含量(占鲜样)分别为17.49%、17.56%、17.19%;脂肪含量(占鲜样)分别为4.63%、1.97%、1.69%。[结论]3种鱼含肉率比大宗养殖淡水鱼类的含肉率高,肌肉中蛋白质含量也比较高,综合评价川鲶、细鳞斜颌鲴、丁鱼岁的营养价值较高,有较好的经济性状和生产性能。[Objective]The flesh contents,fatnesses and nutritional compositions of Silurus meriaionalis Chen×Silurus spp,Plagiognathops microlepis Bleeker,Tinca tinca were measured and their nutritional values were evaluated.[Method] All fishes were collected and analysed from Yuzhuang Reservoir,a experimental base of Tianjin fisheries research institute by conventional biochemical methods.[Results]The order in the flesh content in three species of fishes was Silurus meriaionalis Chen×Silurus spp(68.47%)〉Plagiognathops microlepis Bleeker(67.12%)〉Tinca tinca(64.04%).The flesh content of Silurus meriaionalis Chen×Silurus spp was significantly higher(P〈0.05)than that of Tinca tinca.The results showed that crude protein contents(Wet)and crude fat contents(Wet)of Silurus meriaionalis Chen×Silurus spp,Plagiognathops microlepis Bleeker and Tinca tinca were 17.49%,17.56%,17.19% and 4.63%,1.97% and 1.69%,respectively.[Conclusion]All of three species of freshwater fishes were with high nutritional value,good economic characteristics and culturing prospects.
