摘  要:根据甘肃现有猪种皮特兰(Pretriain)、杜洛克猪(Duroc)、大约克夏(Large Yorkshire)、大白猪(Landrace)和华特B系猪(Huate B),选择皮杜、皮杜B、皮杜大、皮杜长大和杜长大等5个杂交组合,选用60日龄仔猪进行为期90d的育肥试验,屠宰后取背最长肌,经甲酯化后用气相色谱法测定肌内脂肪酸含量,以研究导入皮特兰血液对商品猪肌内脂肪酸组成的影响。结果表明:导入皮特兰血液的各组合商品猪肌肉中检测出豆蔻酸、棕榈酸、棕榈油酸、硬脂酸、油酸、亚油酸、亚麻油酸等脂肪酸,其含量除棕榈酸外,其余脂肪酸在各组合间均有显著差异(P<0.05),其中棕榈油酸、硬脂酸、油酸、亚油酸、亚麻油酸间存在极显著差异(P<0.01)。各组合不饱和脂肪酸以皮杜B最高,为59.50%,极显著高于其他组合(P<0.01),杜长大与皮杜长大间差异不显著(P>0.05),皮杜含量最低,为51.95%。多不饱和脂肪酸与饱和脂肪酸之比皮杜B最高,为0.44,达到肉品营养价值标准。Five pig breeds including Pretriain(P), Duroc(D), Large Yorkshire(Y), Landrace(L), Huate B pigs(B) raised in Gansu were chosen, and five combinations (P×D, (P×D)×B, (P×D) ×Y, (P×D)×(L×Y), as well as D×(L×Y)) were selected in present study. Piglets were used to conduct a fattening test for ninety days, to slaughter to study on influence of commercial pigs by admitting pretrain pigs genes on fatty acid composition. The results show as follows: the pongissimus muscle of combination commercial pigs which consist of the Myristic acid, Palmitate acid, Paimitate oleic acid, Stearic acid, Oleic acid, Lindeic acid, Linoleinic acid and etc, which were the significant difference between combinations except for Palmitate acid. The content Of unsaturated fatty acid in (P×D) ×B (59.50%) is the highest, and obviously higher than other pigs(P〈0.01 ), there is no difference between D× (L×Y) and (P×D)×(L×Y), but P×D was 51.95%, polyunsaturated fatty acids (PUFA)/saturated fatty acid (SFA) of (P×D) ×B (0.44) are equal to the best ration (0.45) in human nutrition.
