胡萝卜籽粗提物抗氧化性及稳定性研究

摘　　要：用分光光度法对胡萝卜籽粗提物的抗氧化性进行初步研究。考察胡萝卜籽粗提物的总还原能力,对羟自由基(.OH)和过氧化氢(H2O2)的清除能力,以及在不同条件下胡萝卜籽粗提物的稳定性。结果表明:胡萝卜籽粗提物有较强的还原能力,对.OH和H2O2均具有较好的清除作用。该粗提物的光稳定性不好,在酸性溶液中能稳定存在,在50℃以下有较好的热稳定性。The antioxidant activity of extracts from carrot seeds were studied with photometric method.The scavenging quality of hydroxyl free radical（.OH）and Hydrogen Peroxide（H2O2）,the total reducing power and its stability in different conditions were studied.The results showed： the crude extract of carrot seeds have good reducing power and have good scavenging effect on.OH,H2O2.It can be stabled in aicd solution and under 50 ℃.The effect of light on stability is not very well.
