摘　　要：对板栗的贮藏性、营养物质的变化、糊化性和加工性等作了详细的介绍,并对研究和开发方面的局限性进行了阐述,以期为板栗自身的系统性研究和板栗产业的深度开发提供依据。The storage properties, changes of nutrients, pasting and processing properties of chestnut are introducted in this paper. And the limitations of chestnut＇s research and development are elaborated, which provide the reference for systematic study of chestnut and depth development of chestnut industry.
