摘  要:以川渝中烟2000—2005年库存的293份烤烟样品为材料,分析了烤烟挥发酸含量在不同年份、不同部位、不同产区之间的分布特点.结果表明:1)烤烟挥发酸含量在样品间存在广泛的变异,变幅为0.11%~0.46%,平均值为0.24%,变异系数为25.64%;湖南烤烟样品挥发酸含量较高(0.29%),河南烤烟样品挥发酸含量较低(0.21%).2)对烤烟挥发酸含量进行聚类分析,表明中等挥发酸类群的美拉德反应产物、芳香族氨基酸降解产物、类胡萝卜素降解产物和中性香气物质总量明显高于低挥发酸类和高挥发酸类的烟叶样品;高挥发酸类新植二烯含量最低,低挥发酸类新植二烯含量较高;类西柏烷降解产物表现为:中挥发酸类<高挥发酸类<低挥发酸类.2000-2005 years 293 flue-cured tobacco samples from China Tobacco Chuanyu Industrial Corporation were used to analyze contents of volatile acids among different years,different leave positions and different areas.The results showed that:1)Volatile acids contents in tobacco leaves had significant difference among samples,ranged from 0.11%~0.46%,with average of 0.24% and variation coefficient of 25.64%.Contents of volatile acids were high in Hu'nan(0.29%)and low in He'nan(0.21%).2)Cluster analysis showed that Maillard reaction products,degradation products of aromatic amino acids,carotenoids and total neutral aroma matter content in groups of medium volatile acids contents were significantly higher than those in groups of low and high volatile acids contents.New neophytadiene content was the lowest in high volatile acid group and highest in low volatile acid group.Products degraded by cembrane performed as follows:medium volatile acid grouphigh volatile acid grouplow volatile acid group.
