摘  要:冷害是冷敏感果实低温贮藏过程中的主要障碍。在论述冷敏果实冷害产生的原因及冷害症状,以及桃果实冷害发生的可能机理的基础上,从桃果实线粒体结构的变化、ATP含量和ATP酶活性的关系以及淀粉代谢3个方面探讨了桃果实冷害与能量代谢的关系。据此建立和完善采后低温贮藏技术,为桃果实在冷藏期间以及冷藏回温后风味的保持提供保障。Chilling injury, is the major obstacle to storing cold-sensitive fruit during low temperature storage. The reasons for causing chilling injury of cold-sensitive fruit and the symptoms of chilling injury were summarized, and the possible mechanism for chilling injury of peach fruit was defined. Meanwhile, the relationship between chilling injury and energy metabolism of peach fruit was diseassed from three aspects that the changes in the mitochondrial structure of peach fruit, the relationship between ATP content and ATPase activity, and the starch metabolism. According to the results obtained from above, the postharvest cold storage technologies should be established and improved to keep the flavor qualities of peach fruits during cold Preservation and after cold preservation.
