摘  要:以锦绣黄桃优变株系果实为试材,通过制汁、制罐品质比较,结合产量、原料利用率等因素,对其制汁、制罐适制性进行综合评价,为选择适宜加工途径提供依据。结果表明:锦绣黄桃优变株系果实制汁制罐品质优良,制汁呈色浅黄纯正、均匀鲜亮,风味酸甜适中,香气浓郁;制罐呈橙黄色、质地细韧,风味酸甜可口,香气较浓郁;果实出汁率、制罐原料利用率也高。但用于制罐则须切成多块,造成块形多样而不整齐。;To provide a better basis for the processing mutants of Jinxiu, taking the unitization of the raw material, mutants, into consideration, we studied and evaluated the quality of mutant juice and can. We found that mutants are good in making juice and can. Pure mutant juice was pale yellow, even and bright in color with a moderate taste of acid and sweet and a strong aroma while mutant can was orange with an exquisite texture, a moderate taste of acid and sweet and a strong aroma. The utility value of mutants was quite good. There was a need for cutting mutants into small pieces to make mutant can, which results in multiplex and irregular block-shapes.
