摘 要:为苦丁茶的优质栽培提供理论参考,采用自然干旱方式,研究了干旱对苦丁茶品质指标的影响。结果表明:干旱对各品质指标有显著影响,随干旱时间的延长,茶多酚、黄酮、茶皂素含量变化一致,均呈先升后降趋势;可溶性糖含量呈递增趋势;游离氨基酸、水浸出物含量呈递减趋势。综合考虑品质指标与品质关系,适度干旱有利于品质的形成,并以持续干旱10 d效果较好,过度干旱则化学成分含量总体降低,进而影响品质。Effect of natural dry stress on quality indicators of Kuding tea were studied to provide theoretical reference for high quality cultivation of Kuding tea.The results showed that drought had significant effect on quality indicators.The contents of tea polyphenol,flavone and tea saponin first increased and then declined with drought time prolonging.The content of soluble sugar increased continually while free amino acid and water extraction decreased continually.The relationships between quality indicators and quality indicated that the formation of quality was due to moderate drought,10 days of continuous drought had the best effect,the content of overall chemical composition reduced due to excessive drought,thereby the quality of Kuding tea was affected.
