高职校内“工学结合”平台的开发应用研究——以南京工程高等职业学校旅游管理专业食尚餐厅为例

摘　　要：本文针对目前"工学结合"存在的问题独辟蹊径,以高职院校旅游专业为例,以现有餐饮实训设施为基础,按"工学结合"要求进行改造经营,将创业、教学和实训融为一体,从而创建一个真正的"工学结合"新模式。本文重点解决四大问题:一是许多高职院校投巨资建设的餐饮实训设施利用率不高;二是单纯不可持续的消耗性实训;三是流于形式的"工学结合";四是学生创业难。This paper dwells on the development and application of platform with characteristics of combining learning with training for tourism major in higher vocational schools based on the author＇s practice and experience.The article aims to create a new teaching mode through the integration of project pioneering,operation and training with focus on solving the four major problems between teaching and training in higher vocational schools.First of which being the huge infrastructure investment and its utilization rate in experimental building;secondly,the unsustainable consumption of training equipment,third,the mere formality of teaching and training combination without real content;and fourthly,searching for ways and experiences for students to start their own business after graduation.
