中国大鲵皮肤营养成分分析

摘　　要：采用常规方法对大鲵(Andrias davidianus)皮肤水分、粗蛋白质、粗脂肪、灰分、氨基酸以及Ca、P、Zn等营养成分进行分析和评价。结果显示:新鲜大鲵皮肤水分含量为77.84%,粗蛋白含量25.45%,粗脂肪含量1.23%,灰分含量0.82%;矿质元素中Ca含量101.20μg/g、P含量730μg/g、Zn元素含量高达15.93μg/g;皮肤中共检测出17种氨基酸,氨基酸总量为21.86%,其中7种人体必需氨基酸总量为5.91%,4种鲜味氨基酸总量为9.85%,分别占氨基酸总量的27.03%,45.05%。大鲵皮肤限制性氨基酸为亮氨酸和缬氨酸,氨基酸评分及化学评分得出氨基酸总量较高,必需氨基酸指数(EAAI)为81.65,氨基酸组成较合理。结果表明大鲵皮肤具有较高的营养价值。The nutritional components of Chinese giant salamander′s skin were analyzed.The results showed that：the moisture,crude protein,crude fat and ash in fresh skin of Chinese giant salamander were 77.84%,25.45%,1.23%,0.82%,respectively.The main mineral elements calcium,zinc and phosphorus were 101.25 μg/g,15.93 μg/g,730 μg/g.There were 17 kinds of amino acid in Chinese giant salamander′s skin,and the ratio of total amino acid was 21.86%.The ratio of essential amino acids was 5.91%,which occupied 27.03% of the total amino acid.The ratio of palatable amino acids was 9.85%,which occupied 45.05% of the total amino acid.The limited amino acid of skin were leucine and valine.The Essential Acid Score index（EAAI） of skin was 81.65.The composition of amino acids was resonable.It indicated that skin of Chinese giant salamander was a kind of valuable food with high nutrient value.
