摘　　要：目的:了解并分析衡阳市农贸市场动物性食品重金属污染情况,为减少食品污染提供科学依据。方法:参照全国食品污染物监测系统中推荐监测项目,采用石墨炉原子吸收分光光度计,对衡阳市农贸市场动物性食品肉类、蛋类、奶类、水产品四大类17种食品进行铅、镉、汞含量测定。结果:衡阳市农贸市场动物性食品中铅、镉、汞的检出率分别是97.79%、97.66%、77.34%,其合格率分别是94.85%,97.32%,98.21%。铅超国标的食品有酱鸭、皮蛋、海水鱼、海虾;镉超国标的食品有猪肾、猪肝;汞超国标的食品有海水鱼、海虾。结论:衡阳市农贸市场动物性食品的重金属污染总体较轻,但要加强监督力度。Objective：Understanding of Hengyang City,the farm produce market heavy metal pollution of food of animal origin,analysis of the causes and hazards to human health,in order to provide a scientific basis to reduce food pollution.Methods：In the light of the establishment of the national food pollutant monitoring system,three kinds of heavy metals including Pb,Cd and Hg-four types of Hengyang animal food were monitored.The four types of foods include meat,eggs,milk products and aquatic products.There are 17 types foodstuffs.By graphite furnace atomic absorption spectrometry determination of Pb,Cd,and by cold atomic absorption spectrometry determination of Hg.Results：The detection rate of Pb,Cd and Hg is 97.79%,97.66% and 77.34%.The passing rate of Pb,Cd and Hg comparing the national institute standards is 94.85%,97.32% and 98.21%.Pb in the suace duck,preserved egg,sea fish and sea shrimp exceed the GB standards.Cd in the pork kidney and liver exceed the GB standards.Hg in the sea fish and sea shrimp exceed the GB standards.Conclusion：The pollution of heavy metal in Hengyang animal food is not serious.However,to strenthen supervision is necessary.
