摘  要:花生是我国重要的油脂和食品原料,是我国具有国际市场竞争力的出口创汇经济作物。黄曲霉毒素是黄曲霉等真菌感染后产生的次生代谢物质,黄曲霉毒素污染花生具有偶然性和不均匀性,黄曲霉毒素超标是目前我国花生出口中存在的主要质量问题。针对我国花生出口贸易实际,分析提出了我国出口花生黄曲霉毒素污染的预防和控制措施。从生产、收购、贮藏、加工、检测和装运环节,提出注意收获季节气候变化、精选产地、合理控制储运加工过程中的温湿度、挑选去除不完善果仁等具体措施,达到有效控制出口花生黄曲霉毒素污染的目的。Peanut is an important product used as cooking oil and food raw materials in China,as well as an export cash crop in the global peanut market.Aflatoxin is a fungal infection resulting from Aspergillus flavus,with features of randomness and uncertainty.Peanut aflatoxin is one of the quality problems of Chinese exports which confused amount of processing enterprises.For the purpose of practical application,it was proposed the prevention and control measures aiming to improve the quality of peanut products by cleaning up aflatoxin contamination.The author investigated all the aspects which may bring pollutions,that comprise of the production,acquisition,storage,processing,testing and shipping links.The result showed that climate change and the harvest season,the determine of farming location,the processing of the reasonable control of storage temperature and humidity,the selection of specific measures to remove imperfect nuts should be concerned in order to effectively control aflatoxin contamination of export peanuts.
