摘  要:目的:了解不同经济收入的北京市居民主要食品消费的行为和观念。方法:2007年10月~12月随机选择4个时间点(均为13:00时至17:00时),采用拦截调查的方式对287名到城区(朝阳区)某京客隆超市和307名到郊区(昌平区昌平镇)某美廉美超市购物的居民进行问卷调查,城区和郊区各调查2次。比较不同家庭人均月收入的居民食品消费行为和习惯。结果:1.93.1%的北京居民经常购买食品的地点是超市,较高收入的居民在购买食品时更多考虑对健康的影响、自己和家人的口味、品牌和同类食品的价格等因素(P<0.05)。2.猪肉是北京居民购买最多的鲜肉类,较高收入的居民经常购买熟肉制品和冷冻包子、饺子等食品的比例明显高于较低收入者(P<0.001),而不购买这些食品的主要原因差异无统计学意义(P>0.05)。3.仅有25.0%的居民经常吃脱脂或低脂牛奶,不同收入的居民常吃牛奶品种的差异无统计学意义(P>0.05)。4.仅有13.6%的居民经常购买低钠盐,较高收入居民经常购买低钠盐的比例明显高于较低收入者(P<0.001),而不购买低钠盐主要原因的差异无统计学意义(P>0.05)。结论:经济收入影响北京市居民的食品消费观念和食品消费行为,但即使是较高收入的居民依然普遍存在问题,要促进居民健康的食品消费行为,需要大量深入细致的健康教育。Objective:Objective To investigate the effects of different income level of Beijing Residents ' on their major concepts and behaviors of food consumption. Methods : Questionnaire surveys were conducted at 4 randomly chosen points in time (all between 13: 00PM and 17: 00PM) from October to December 2007. Intercept survey approach was used on 287 customers shopping at a Jingkelong supermarket located in urban area ( Chaoyang district) and 307 customers shopping at a Meilianmei supermarket located in suburban area (town of Changping, Changping district). Both places were surveyed twice. The behaviors and habits of food consumption of families of Beijing residents at different income level (per month, per capita) were compared. Results: 1 ) 93.1% of Beijing residents frequently use supermarket to buy food products. Residents at higher income level give more consideration to health effects, taste for themselves and their famihes, brand name and price difference for similar food products, etc ( P 〈 0.05 ). 2) In the category of fresh meat products, pork is the most purchased meat by Beijing residents. Residents at high income level buy cooked meat products and frozen stuffed bun, dumpling significantly more frequently than residents at lower income level (P 〈 0. 01 ), but there is not significant difference for the reasons of not buying these products ( P 〉 0. 05). 3) There is no significant difference on the consumption of milk products between residents at different income level ( P 〉 0.05 ). Only 25.0% of residents consume low fat or skim milk on a regular basis. 4) Only 13.6% of residents frequently buy low sodium salt. Residents at high income level buy low sodium salt significantly more frequently than residents at lower income level ( P 〈 0. 01 ), but there is not significant difference for the reasons of not buying these products ( P 〉 0. 05 ).
