摘　　要：微生物法检测奶粉中水溶性维生素,为美国公职分析化学家协会AOAC要求的官方检测方法,也为国标所采纳,一直沿用至今。其灵敏度高,已被全世界所公认。但该法操作复杂,影响结果的因素很多,对检验人员和实验室的要求较高。针对这一问题采取对同一样品进行大量的实验,以确定其波动性,为乳制品的检测提供有力的数据支持。选取同一包奶粉进行多次重复测定,观察其样品与平均值的分布情况,相对标准偏差以及CV值。烟酸、泛酸、叶酸、VB12稳定性较好,生物素相对次之;烟酸和泛酸重复测定的精密度最好,叶酸和VB12相对较好,生物素精密度次之。The microbiological method for assay of vitamin in milk power is the method of the AOAC official requirement,which is also adopted and continued up to now in Chinese national standard.It＇s high sensitivity was generally accepted by the world,while the method raise relatively high demand for laboratory and analyst for its complicated operation and much influencing factors.For the question,we made lots of experiments to detect a sample to definite the fluctuation and provide suitable data.Repeated detected the same milk power sample and viewed the value distribution of the sample,the average,the relative standard deviation and the CV.Nicotinic acid,pantothenic acid,folic acid and Vitamin12 possess better stability than biotin;nicotinic acid and pantothenic acid were the best in precision,folic acid and vitamin12 were better than biotin.
