摘 要:探讨用超声技术从竹叶中提取茶多酚的最优工艺条件,并对茶多酚的抗氧化性进行研究。以茶多酚的产率为考察指标,通过单因素试验和正交试验确定从竹叶中超声提取茶多酚的适宜工艺条件:超声功率为70W,浸提温度75℃,超声时间40min,料液比1:20,乙醇体积分数75%,此条件下茶多酚提取产率为0.6243%。以Fenton反应、DPPH法检测其清除自由基活性,结果表明,竹叶中茶多酚具有较强的清除羟基自由基的能力,是一种很好的天然抗氧剂。To explore optimal process conditions of extracting tea-polyphenols from bamboo leaf by ultrasonic technology and measure its antioxidational effects, take the tea-polyphenols yield as index, based on the single factor and orthogonal tests,determine the optimum conditions of extracting tea-potyphenols from bamboo leaf by ultrasonic. The optimum conditions were ultrasonic power 70 W, extracting temperature 75℃, extracting time 40 min, ratio of solid to liquid 1/20(g/ml.), ethanol concentration 75%. Under these conditions,the extraction yield of tea-polyphenols was 0. 624 3%. The antioxidative activities, including scavenging activity of hydroxyl radicals and 1,1-diphenyl-2-picrylhydrazyl (DPPH)radicals were studied. The results indicated that the tea-polyphenols from bamboo leaf exhibited high free radical scavenging activity and it is a good natural antioxidant.
