信宜怀乡鸡的生长性能及部分肉质性状测定

摘　　要：本试验选用广东省四大名鸡之一——信宜怀乡鸡商品雏120只,分为公母2个处理组,每个处理组有4个重复,每个重复15只,进行了0～16周龄的饲养试验,旨在探讨怀乡鸡的生长性能和部分肉质性状特点。结果表明:生长性能,16周龄体重公母分别为1744g和1590g,公母间体重在6周龄后一直存在显著差异(P<0.05);屠宰性状,16周龄宰前体重、屠体重、全净膛重、胸肌重、腿肌重、头、脚、翅、胫长、胫围及部分器官等总体趋势是公鸡大于母鸡,差异显著(P<0.05),而腹脂重、肌间脂肪宽和皮下脂肪厚为母鸡大于公鸡,差异显著(P<0.05);肉质性状,16周龄胸腿肌的肉色、pH、滴水损失、水分及粗灰分含量,公母间差异不显著,胸肌、腿肌的粗蛋白含量均是公鸡显著高于母鸡,差异显著(P<0.05),胸肌、腿肌的粗脂肪含量均是母鸡显著高于公鸡,差异显著(P<0.05)。This feeding experiment lasted for 16 weeks was conducted to investigate the growth performance and meat quality of purebred Huaixiang Chickens.120 huaixiang chickens were selected and divided by sex into 2 treatment groups for 4 replicates of 15 birds each.Resuhs showed that There wase a significant difference in body weight between males and females （P〈0.05） in final body weight with 1744g and 1590g respectively; The live bodyweight, eviscerated weight, breast muscle weight, leg muscle weight, head, feet, wing, tibia length, shank circumference and some other organ and their partition weight were significantly （P〈0.05） higher in males than in females, while abdominal fat, intramuscular fat length and subcutaneous fat were significantly （P〈0.05） higher in females than in males. There was no difference （P〉 0.05） in meat color, PH, drip loss, moisture and crude ash content for the thoracic and leg meat between the treatment groups; but the crude protein content for the thoracic and leg meat were significantly （P〈0.05） higher in males than in females and fat content for the thoracic and leg meat were significantly （P〈0.05） higher in females than in males.Other indicators and meat quality traits of breast and leg did not reach significant different level（P〉 0.05）.
