摘  要:目的了解北京市丰台区11类直接入口食品中食源性致病菌的污染状况。方法对丰台区11类餐饮业11种直接入口食品进行了调查,检测方法按照GB/T 4789-2003和WS/T 9-1996进行。结果调查中共检出变形杆菌117株、致病性大肠埃希菌(EPEC)22株、单核细胞增生性李斯特菌3株、副溶血性弧菌2株、金黄色葡萄球菌1株、蜡样芽孢杆菌计数>105/g检出1份,检出率分别为10.47%、1.97%、0.28%、1.16%、0.08%、0.08%。未检出沙门菌、志贺菌和出血性大肠埃希菌(EHEC O157H7/NM);夏秋季检出率高于冬季;熟肉制品及凉拌菜中食源性致病菌检出率较高。结论直接入口食品中致病菌的污染比较严重,夏秋季严重,熟肉制品及凉拌菜中检出率高。[Objective]To understand the contamination status of foodborne pathogens in 11 kinds of directly edible food in Fengtai District of Beijing City. [Methods]Eleven kinds of food samples from 11 kinds of restaurants were tested according to GB/T 4789-2003 and WS/T 9-1996. [Results]A total of 117 strains of Proteus,22 strains of EPEC,3 strains of Listeria monocytogenes,2 strains of Vibrio parahaemolyticus and 1 strain of Staphylococcus aureus were isolated from food samples and the positive rate was 10.47%,1.97%,0.28%,1.16%,0.08%,0.08% respectively.Salmonella,Shigella and EHEC O157H7/NM were not isolated from all kinds of food samples.The positive rate in summer and autumn was higher than that in winter.The detection rate of foodborne pathogens was highest in cooked meet and salad. [Conclusion]The contamination of foodbome pathogens in food edible directly was serious.The serious contaminated season is summer and autumn,the major contaminated food is cooked meet and salad.
