摘 要:[目的]探讨膳食微量元素摄入影响儿童抗氧化能力的作用水平。[方法]选择唐山市3所小学382名1~6年级学生进行一般情况、食物摄取频率和膳食调查,经家长知情同意后采静脉血测定其抗氧化酶和过氧化产物水平;营养计算器V1.6转换数据,SPSS11.5软件进行分析。[结果]当锌摄入水平在80%推荐摄入量(RNI)以下时,受影响的血清SOD低于参考值,MDA水平高于参考值;当硒摄入水平在100%RNI以下时,受影响的血清MDA水平高于参考值,在140%RNI以下时,GSH-Px低于参考值;当铜摄入水平在100%RNI以下时,受影响的血清MDA水平高于参考值,在140%RNI以下时,SOD低于参考值;当铁摄入水平在150%适宜摄入量(AI)以下时,受影响的血清MDA水平高于参考值,在200%AI以下时,SOD低于参考值。[结论]当锌摄入量≥80%RNI、硒与铜摄入量≥140%RNI、铁摄入量≥200%RNI时,儿童体内抗氧化指标水平达到正常;需要通过调整膳食结构及必要时的补充干预,提高儿童体内抗氧化能力。[Objective]To study effect of microelements intake levels on antioxidant activity in children.[Methods]Totally 382 students from 1-6 grades were investigated about their general state of health,5 days diet and 1 month food frequency.Serum vitamin,antioxidant enzymes and peroxidation product were determined after being informed to parents.The intakes were transformed with nutrition calculator V1.6.The data were analyzed with SPSS11.5 software.[Results]When zinc(Zn)intakes were below 80% of reference nutrient intake(RNI),the level of serum SOD was lower than normal level,MDA was higher than normal level.When selenium(Se)intake was below 100% of RNI,the level of serum MDA was higher than normal level.When Se intake was below 140% of RNI,GSH-Px was lower than normal level.When cupper(Cu)intake was below 100% of RNI,the level of serum MDA was higher than normal level.When Cu intake was below 140% of RNI,SOD was lower than normal level.When iron(Fe)intake was below 150% of adequate intake(AI),the level of serum MDA was higher than normal level.When Fe intake was below 200% of AI,SOD was lower than normal level.[Conclusion]Children's antioxidant levels are normal when their intakes of Zn﹥80% of RNI,Se﹥140 of RNI,Cu﹥140% of RNI,and Fe﹥200% of AI.It is necessary to improve dietary or microelements supplementation for children,so as to enhance their anti-oxidative capacity.
