摘 要:采用分光光度法对新乡市市售豆芽中亚硝酸盐的含量进行了随机采样检测。结果表明,在亚硝酸盐的量为0~12.5ug/50ml水溶液时与吸光度有良好的线性关系,其线性回归方程为A=0.016x+0.003(r=0.9990),该方法简便、快捷、灵敏、实用,可作为食品中亚硝酸盐含量的测定方法,利用此方法测定的样品中亚硝酸盐含量均未超过相关标准。by the spectrophotometric method,we made a random sampling detection to the nitrite content of bean sprouts sold in Xin Xiang markets,The results showed that,under the condition of the range 0-12.5ug of nitrite in an overall 50ml aqueous,the calibration graph for aqueous solution was obtained by plotting absorbance values against nitrite concentration,The regression equation A=0.016x+0.003,(correlation coefficient R=0.9990).The method is simple,rapid,accurate,useful,can be applied in the detecting the nitrite content of food.According to the method,the nitrite content of bean sprouts sold in Xin Xiang market is under the range of china's food safety standards.
