摘　　要：酪蛋白磷酸肽(CPPs)是含有成簇的磷酸丝氨酸的生物活性肽,现已证明,CPPs具有重要生理功能。笔者就CPPs的结构、性质、制备工艺、检测方法及生理功能进行综述,并展望其发展前景。Casein phosphopeptide（CPPs） is a kind of bioactive peptides which contain clusters of phosphoserine.It has been proved that CPPs have important physiological function.In this paper,the structure,property,preparation technology,testing methods and physiological function of CPPs are reviewed,and its development prospects are previewed.
