摘　　要：对天然葵黄色素的吸收光谱以及pH 值、温度、光照、氧化剂、还原剂、食品添加剂、一些金属离子对葵黄素光密度值的影响进行了研究。The paper studied the effect of the absorption spectrum of the natural yellow pigment of sunflower,the effects of pH,temperature,illumination,oxidant,reductant,food additives and some metallicions on the absorbance of the yellow pigment of sunflower.
