摘  要:采用过氧化氢酶(CAT)专一性抑制剂氨基三唑(Aminotriazole,AT)处理采后香蕉果皮,以探讨AT对香蕉果实耐冷诱导效果及其对活性氧代谢的影响.结果表明:与对照香蕉果皮相比,AT处理果皮的冷害指数较低、细胞膜透性增加缓慢;AT处理诱导了果皮H2O2含量和O2-.产生速率的提高,并维持了前7 d的高水平;AT处理降低了CAT活性,却增加了APX的活性,导致后期活性氧含量迅速下降;研究还发现,AT处理还诱导了NADPH氧化酶的升高.推测AT诱导的早期活性氧猝发可能作为信号分子参与了香蕉果皮的耐冷诱导.The effects of aminotriazole(AT) on cold resistance and reactive oxygen species(ROS) metabolism of postharvest banana fruit were investigated.The results showed that,compared to control peels,the chilling injury index of AT treated peels was lower and the increase of cell membrane permeability was slower.Moreover,AT treatment induced the increase of H2O2 content and O-2·production and maintained their high levels before 7 days.AT treatment reduced the activities of CAT while increased the activity of APX and NADPH oxidase in banana peels.It was suggested that the reactive oxygen species induced by AT might be involved in chilling resistance of banana peels as signal molecular.
