摘 要:目的了解某高校大学生早餐就餐情况和营养摄入水平及其影响因素,为大学生早餐营养健康教育提供参考依据。方法从某医科大学医学专业和非医学专业分层随机抽取学生共454名,用问卷调查法收集其早餐就餐情况。结果每天都吃早餐者占总调查人数的42.29%;仅2.42%的学生早餐中包括谷类、肉类、蛋奶(豆)类、蔬菜(水果)四大类食物,大部分学生早餐食物单调。51.98%的大学生依据食物口味来选择早餐,46.48%的大学生依据营养价值来选择早餐。大于80%的学生有意愿了解更多早餐营养知识并改变不良的饮食习惯。结论大学生早餐摄入情况不容乐观,每天进食早餐率低,早餐能量摄入量低,营养价值不高,有必要在大学生中加强早餐营养健康教育。Objective To learn about the breakfast behavior among medical university students,and nutrition levels along with major attributing factors,which will then contribute to health education of breakfast among college students.Methods Using stratified random sampling method to select 454 students in total from medical-specialty and non-medical specialty;by questionnaire survey to get data of their breakfast behaviors.Results About 42.29% of the students had breakfast everyday,only 2.42% of whom had breakfast including frumentum,meat,milk or soybeans and eggs,vegetables and fruits.The majority had monotonous food for breakfast.There were 51.98% students choosing breakfast according to the flavor and taste,while 46.48% students to the trophic value.More than 80% students were willing to get to know more breakfast knowledge and to change the bad habits.Conclusion The situation of college students' breakfast is still far from satisfactory,not only there is low rate of students who have breakfast normally to reach to the standard of breakfast energy intakes,but also the nutritive value is not good enough.It is important to reinforce health education among college students about breakfast and its necessity.
