摘  要:为建立中红外光谱快速评价苹果浓缩汁质量的检测体系,采集47个批次苹果浓缩汁的中红外ATR吸收光谱。从中选取15个经化验合格的批次样品作为标准,以其对应的红外光谱为标准数据集。建立相似度计算模型,并将其用于计算剩余32个批次样品的相似度。通过设置合理的相似度阈值,根据样品的相似度值来评价该样品的合格与否。该方法的评价结果与常规化验结果高度一致,准确率96.8%。红外光谱法评价苹果浓缩汁不仅结果准确,且具有操作简单、快速,检测成本低等优点。To develop a rapid method for assessing the quality of apple juice concentrate(AJC) by mid-infrared spectrum(MIRS),the ATR spectrums of the 47 AJC samples from different batches were gathered.15 of the 47 samples,which had been adjusted to be qualified by chemical examination,were used to construct a standard data set by their MIRS.A similarity computing model was developed,and then it was used to analysis the similarity value of the rest 32 samples.Whether a sample is qualified or not was judged by comparing their similarity value versus the threshold value which had been set responsibly.The judgment results via MIRS methods had a high degree of uniformity with the results drive from the normal chemical methods,with a correct rate of 96.8%.The present results showed that as a detection method on the quality of AJC,the MIRS was not only accurate,but also simple,rapid and costless.
