摘 要:叶菜因叶表面积大、含水量高、组织脆嫩等特点而难于贮藏,在运输过程中常因保鲜问题造成较大损失。就目前叶菜的保鲜技术进行了综述,包括采前药剂浸种、叶面喷洒保鲜剂以及采后简易贮藏保鲜、低温保鲜、保鲜剂保鲜、磁场贮藏保鲜、气调保鲜、减压贮藏保鲜等,以期为叶菜贮运人员的工作提供理论参考,并对叶菜保鲜技术进一步的研究提出建议。Leaf vegetables are difficult to be kept fresh because of their wide leaf surface area,high content of water and tender tissue,and most of them are rotten during the process of storage.In this paper,various techniques of freshness-protection before or after the harvest of leaf vegetable were summarized,with the purpose of providing referenced theory to the correlative worker.The freshness-protection techniques include soaking vegetable seeds or sprinkling the surface of vegetables with medicament before harvest,keeping vegetables fresh by simple processing,low temperature,medicament,magnetic field,controlled atmosphere or pressure relief after harvest.Finally,several pieces of advice for the further study were proposed as well.
