黑色食品新资源“紫叶甘薯菜”的营养功能与开发前景

摘　　要：经几年来的调研,筛选出黑色食品新资源——紫叶甘薯菜1号,并进行了营养功能分析,首次在甘薯茎尖叶片中测出富含绿原酸及原花青素等生物色素,目前正在试种。The new black food resource＂Purple Leaf Sweet Potato No.1＂ was selected by authors after several years＇ search and investigation.Its nutrition and function were analyzed,the results indicated that the shoot-tips and leaves were rich in chlorogenic acid and biological pigments such as anthocyanidin,and the test cultivation was under way.
