摘  要:对微胚乳玉米双超1号在乳熟期(授粉后21 d)籽粒中的多种营养成分进行了测定,并与超甜玉米正甜68进行了比较。结果表明,双超1号的蛋白质、脂肪、总膳食纤维、β-谷甾醇、磷脂、总黄酮、镁、锌、钙、钠、钼、碘、泛酸、胆碱、VB2和氨基酸的含量高于正甜68;双超1号的总糖、淀粉、果酸、铁、锰、铜、钾、VE、VC、VB1和β-胡萝卜素的含量低于正甜68;粗纤维和硒的含量二者相同。表明微胚乳玉米是一种富含多种营养成分的鲜食玉米。The main nutritional components of the kernels were measured for the micro-endosperm maize Shuanchao1 in the milky maturity stage(21 days after pollination),and compared with those of the super sweet maize Zhengtian 68.The results were as follows: the contents of protein,fat,total dietary fiber,β-sitosterol,phosphatide,total flavonoids,Mg,Zn,Ca,Na,Mo,I,pantothenate,choline,vitamin B2 and amino acid in Shuanchao1 were higher than those in Zhengtian68;the contents of sugar,starch,fruit acid,Fe,Mn,Cu,K,vitamin E,vitamin C,vitamin B1 and β-carotene in Shuanchao1 were lower than those in Zhengtian68;the contents of crude fiber and Se of the two maize materials were equal.These showed that the fresh ears of micro-endosperm maize are rich in nutrition.
