摘 要:水稻种子贮藏蛋白是水稻仅次于淀粉的第二大类贮藏物质,而且易被消化吸收,是人类和牲畜蛋白质营养的主要来源,但其蛋白质和人类必需氨基酸赖氨酸等含量偏低,营养不够全面,因此提高蛋白质含量以及提高赖氨酸含量是稻米营养品质育种的重要目标。利用低谷蛋白突变体可以培育肾脏病和糖尿病患者专用的低谷蛋白水稻品种。简要介绍了目前国内外高蛋白水稻、高赖氨酸水稻及低谷蛋白水稻的遗传改良研究进展。Protein in rice grains is the second most abundant storage components just fewer than starch,and is easy to be digested and assimilated by human being and animals,so it is a major food of human being and animals.But the protein content of rice grains and its lysine component are poor for human being,and the proportion of the nutritional components is not on the balance,so it’s important to the rice nutritional quality breeding that how we could increase the contents of protein and its lysine component.On the other hand,we can breed low-glutelin rice cultivars through improving germplasm of low glutelin content which specially provide food for the patients with diabetes and nephropathy.In this paper,the progresses of the rice genetic improvement in the high protein content,high lysine component and low-glutelin content were reviewed.
