摘  要:[目的]了解大理州直管餐饮业单位食(饮)具的消毒质量,分析其影响因素,保障广大人民群众的身体健康。[方法]采用大肠菌群试纸法对大理州直管餐饮单位的食(饮)具消毒效果进行分析。[结果]2008~2010年共抽检样品5540份,合格5137份,合格率为92.73%。3年间食(饮)具消毒合格率逐年上升,合格率的差异有统计学意义(P<0.01)。四星级以上的酒店消毒合格率最高(98.90%),厂矿食堂消毒合格率最低(76.17%),差异有统计学意义(P<0.01)。高温蒸汽法消毒的效果好于煮沸和化学消毒剂消毒。[结论]应加强直管单位特别是厂矿食堂食(饮)具消毒的监督监测工作。[Objective]To evaluate the sterilization quality of tableware in the agencies administered by Dali prefecture, analyze the associated factors, so as to ensure the public health. [Methods]The tableware were randomly taken out. The sterilization quality of the tableware was detected by coliform group reagent paper method. [Results]The total of the samples were 5 5,10 during 2008 2010. The number of the sterilization qualification were 5 1:37. And the ratio of sterilization qualification was 92.73%. The ratio of the sterilization qualification increased year by year during 2008-2010. And the difference had statistical significance (P 〈0.01 ). Four stars hotels had the highest sterilization qualification ratio (98.9%)( P 〈0.01). The canteens of factories and mines, however, had the lowest sterilization qualification ratio (76.17%) ( P〈0.01). The sterilization effect of mega temperature vapor was superior to boiling and chemo-sterilant. [Conclusion]The authority institution should strengthen the monitoring on the tableware of the agencies especially the canteens of factories and mines administered by Dali prefecture.
