摘　　要：叶菜类蔬菜是易腐难贮的农产品。概述了影响叶菜类蔬菜采后贮藏保鲜的主要因素,并重点介绍了国内外叶菜类蔬菜贮藏保鲜技术的研究进展,其中包括物理、化学、生物等保鲜技术,以期为今后更深入的研究提供借鉴和参考。Leaf vegetable is a kind of perishable agricultural products. This paper summarized the major influence factors on storage and preservation of leaf vegetables, and emphatically introduced the research progress in storage technology, including physical, chemical and biological technology. All of these will provide further understanding of current problems and guidance of future research.
