摘  要:目的按照《四川省食品安全风险监测方案》的要求在乐山主城区内主要食品超市和农贸市场采样30份面制食品进行铝残留量检测。方法按照国家标准检验方法GB/T5009.182-2003检测。结果检测蒸制面制品、油炸食品和膨化食品3类所测样品的铝残留量在2.7~743.5 mg/kg,总超标率为33.3%,超标食品均为油炸食品,超标率达90.9%。结论乐山市售油炸类食品铝残留量超标严重。Objective According to The Risk Monitoring Schemes of Food Safety in Sichuan, 30 copies wheat flour food from the main food supermarkets and rural trade markets in Leshan were collected as samples of the aluminum residues detection. Methods Detection was conducted according to the national standard GB/ T5009. 182-2003. Results The aluminum residues in three kinds of samples (steamed product, fired food and puffed food) was 2. 7 -743.5 mg/kg, The total exceeded rate was 33. 3%. Exceeded foods were all fried foods, the exceeded rate up to 90. 9%. Conclusion The almninum residues in fried foods of Leshan is seriously exceeded.
