摘  要:[目的]比较山东地方鸡品种与高产蛋鸡品种之间蛋品质的差异。[方法]选取山东省3个地方鸡品种济宁百日鸡、汶上芦花鸡、莱芜黑鸡和引进的高产蛋鸡海兰褐鸡,进行蛋品质的比较研究。[结果]山东地方鸡的蛋黄比例、蛋形指数和蛋壳强度均显著高于海兰褐鸡(P<0.05),而平均蛋重和哈氏单位显著低于海兰褐鸡(P<0.05)。山东地方鸡鸡蛋内的人体必需氨基酸以及亚油酸含量都显著高于海兰褐鸡(P<0.05),但维生素A和维生素E的含量以及总氨基酸和脂肪酸含量在地方品种与海兰褐鸡之间差异不显著(P>0.05)。[结论]该试验研究了不同品种鸡蛋品质的差异,为今后蛋鸡品种的改良提供了参考。[Objective]To observe differences in egg quality between Shandong local hens and Hyline Brown hens.[Method]Hyline Brown hens and three Shandong local chicken breeds including Jining Bairi chicken,Wenshang Luhua chicken and Laiwu Black chicken were selected for egg quality comparison.[Result]The percentage of yolk,egg-shape index and shell strength were significantly higher in the Shandong local hens than in Hyline Brown hens(P〈0.05),but the opposite results were found for average egg size and Haugh unit(P〈0.05).The contents of essential amino acids and linoleic acid were significantly higher in the eggs of Shandong local hens than in Hyline Brown hens(P 〈0.05),but no significant difference in vitamin A content,vitamin E content,total amino acid content and fatty acid content was found between the Shandong local hens than in Hyline Brown hens.[Conclusion]The study investigated the differences of egg quality between different chicken breeds,which provides a reference for improvement of laying chicken breeds in future.
