摘 要:蔬菜、水果等农产品的质量安全越来越受到全社会关注,对其在生产阶段和加工、包装、储运等采后阶段进行质量安全风险控制,建立和完善符合中国国情的农产品冷链物流,制定高效、可靠、便捷、低成本的农产品追溯系统显得越来越必要和紧迫。本文就果蔬等农产品在产前、产中、产后各环节中涉及的质量风险问题,如农药残留、重金属超标、硝酸盐和亚硝酸盐超标、微生物污染等现象的产生原因、指标检测方法和问题解决对策进行综述。The quality safety of vegetables,fruits and other agricultural products is aroused the concern of the whole society.It was becoming more and more necessary and pressing to control the risk of quality safety in their production phase and postharvest phases such as processing,packing,transportation,and so on,to establish and perfect the agricultural cold-chain logistics according will the situation of china,and formulate efficient,reliable,convenient and inexpensive products traceability systerm.The quality risks problems involved in before,during and after procedures of fruits,vegetables and other agricultural products,such as pesticide residues,luxury heavy metals,nitrate and nitrite exceeds bid,microbial pollution were proposed,and their reasons,index measuring methods and solutions were also reviewed in this paper.
