摘  要:以3个南高丛越橘(Vaccinium corymbosum)品种和2个兔眼越橘(V.ashei)品种为试材,进行了果实品质、糖酸组分、抗氧化物质及其能力的比较分析。结果表明,5个品种中,南高丛越橘品种密斯黛(Misty)的果形最大,园蓝(Gardem Blue)果实的可溶性固形物含量最高,而粉蓝(Powderblue)和密斯黛(Misty)果实的可滴定酸含量都较低。越橘果肉中的可溶性糖以葡萄糖和果糖为主;有机酸包括柠檬酸、苹果酸、奎尼酸和酒石酸,不同品种间有机酸含量和比例有一定的差异。越橘果实的主要抗氧化物质为花色苷、酚类和类黄酮化合物,其中,粉蓝果实的花色苷含量最高,园蓝果实的总酚和类黄酮含量最高。通过DPPH、TEAC和FRAP检测,园蓝和粉蓝的抗氧化能力较强。Three southern high-bush blueberry (Vaccinium corymbosum) and two rabbit-eye blueberr (V. ashei) cuhivars were involved in the experiment. Fruit quality , sugar and acid composition , antioxidant properties and activity were analyzed. Results showed that of the 5 cultivars, Misty produced the biggest fruit, Gardenblue had the highest soluble solids content, while Powderblue and Misty had the lower titratable acid. Glucose and fructose were the predominant sugars in the pulp; the main acid were citric acid, malic acid, quinic acid and tartaric acid, and different cultivars showed remarkable difference in organic acid compositions. Anthocyanins, phenolics and flavonoids were the main antioxidant compounds and Powderblue had the highest total anthocyanin content, while Gardenblue had the highest phenolic and flavonoid content. Gardenblue and Powderblue showed higher antioxidant activity than the other cul-tivars, as measured by assays of 1,1-diphenyl-2-picrylhydraz scavenging(DPPH) , 2,2-azino-bis-(3-ethylbenzothiazoline-6-sulfonic acid) scavenging(TEAC) and Ferric reducing antioxidant power(FRAP).
