摘　　要：油炸淀粉类食品丙烯酰胺中检出的丙烯酰胺被国际癌症研究机构(IARC)列为人类二类(ⅡA)可能致癌原,已引起国内外食品行业和民众的广泛关注。因而我们有必要对丙烯酰胺致癌背景、毒性原理以及预防措施有些初步的了解。Acrylamide which was tested from the fried starch food has been classified as the second kind of possible carcinogenesis material (ⅡA) of human beings by JARC.This thing has caused wide attention form the masses and the food industry at home and abroad .So it is necessary for us to know something about the teratogenesis and poisonous priciple and preventive measures of the arcylamid.
