中国瘦肉猪DⅤ系个别肌肉嫩度的研究

摘  要:应用“C-LM型肌肉嫩度计”对活重达90千克屠宰的40头中国瘦肉猪母本DⅤ系肥育猪的右侧完整腰大肌和左侧半腱肌、半膜肌、股二头肌及半膜肌和股二头肌的近端和远端的嫩度(剪切力值)进行测定。结果表明:所测4块肌肉嫩度差异极显著,以腰大肌为最嫩,其次为半腱肌,而经常使用的半膜肌和股二头肌较老;半膜肌和股二头肌的近端和远端部位间嫩度差异极显著,表现为近端较嫩,远端较老;所测肌肉嫩度重复率均较高,且均达到显著或极显著水准。The forty fattening pigs of Chinese DⅤ lean-type of female parent line, were tested on the right total m. psoas major(PM), the left m. semitendinosus(ST), the left m. semimebranosus(SM), the left m. biceps femoris(BF) and the near and far extremity of tenderness(shearing stress) of the left SM and BF by applying “C-LM” type muscle tenderometer. However, SM and BF which are often used are tougher; there are extremely significant differences for the tenderness between the near and far extremity, showing that the muscle of near extremity is tenderer than that of far extremity. The repeatatability of testing muscle tenderness is high, and reaches significant differences or extremely significant differences.
