摘 要:为了探明普洱老茶饮用的安全性,以贮藏多年的陈香普洱茶为原料,以未渥堆发酵的普洱茶为对照,采用国家标准测定方法对其主要的品质安全性指标进行评价和分析。结果表明,在本研究范围内未检测出致病菌如黄曲霉素、致泻大肠埃希氏菌、大肠杆菌和金黄色葡萄球菌,有1个样品检出沙门氏菌;样品农残检出值为0;重金属铅的含量在0.55 mg/kg~4.43 mg/kg范围内,除1个样品外,其余铅含量均符合茶叶卫生标准和食品中污染物限量要求;总灰分含量范围在6.176%~9.411%,水不溶性灰分含量范围在2.44%~5.217%,大部分样品的水溶性灰分占总灰分的50%以上,酸不溶性灰分含量较低,在0.161%~1.815%范围内,说明茶叶中沾染的泥沙较少,品质较好。In order to prove the safety of drinking old puer tea,using old puer tea with long storage years as materials and un-fermented puer tea as comparison the research appraised and analysed the main quality and safety index in puer tea by national standard methods.The result showed that aflatoxin,diarrhoea causative Escherichia,E.coli and Staphylococcus aureus were not detected and Salmonellae was detected only in one sample.Pesticide Residues were not detected.The content of heavy metal plumbum was in the range of 0.55 mg/kg-4.43 mg/kg,according with Standards for tea quality' and Standards for Maximum levels of contaminants in foods' except one sample.The total ash content was in the range of 6.176 %-9.411 % and the water-unsoluble ash was in the range of 2.44 %-5.217 %.The water-soluble ash accounted for 50 % of total ash in most samples.The acid-unsoluble ash content was low in the range of 0.161 %-1.815 %,which illustrated the less mud and sand in tea and better quality.
