摘　　要：[目的]了解济南铁路辖区餐饮单位食(饮)具消毒效果,进一步加强消毒管理工作。[方法]2010年1～12月采集济南铁路辖区不同餐饮单位食(饮)具1 158份,按GB 14934-94大肠菌群快速检验纸片法检验大肠菌群。[结果]检测食(饮)具样品1 158份,合格的1 092份,合格率为94.30%。氯制剂浸泡法消毒合格率最高为98.28%,不同消毒方法消毒的食(饮)具合格率的差异有统计学意义(P<0.01);托幼机构合格率最高为100.00%,不同单位食(饮)具合格率的差异有统计学意义(P<0.01);茶杯合格率最高为100.00%,不同种类食(饮)具间合格率的差异有统计学意义(P<0.01)。[结论]济南铁路辖区餐饮单位食(饮)具消毒合格率较高。[Objective]To understand the status of tableware disinfection in catering trade of the area under administration of Jinan Railway Administration and further strengthen the disinfection management. [Methods]l 158 samples of tableware were collected from different units in areas under administration of Jinan Railway Administration during January and December,2010. Rapid slip method of China National Standard GB 14934-94 was applied in the determination of total coliforms. Total passing rate of coliforms was calculated. The passing rate of coliforms in tableware between different dis infection methods and different units was calculated and compared respectively. The data were analyzed with SPSS soft ware package. [Results]Of all the 1 158 samples, the passing rate of coliforms in tableware was 94.30%, there was re markable difference of passing rate in different disinfection methods （ P 〈 0.01 ）. The passing rate of disinfection with chlorine was the highest（98.28%）. There was remarkable difference of passing rate in different units（ P 〈0.01）;the passing rate of kindergarten was the highest（98.28%） ;there was remarkable difference of passing rate in different different types of samples, the passing rate of teacup was highest（ 100.00 % ）. [Conclusion]The passing rate of the tableware of food department of Jinan Railway Administration is high.
