摘　　要：香菇是一种高蛋白、低脂肪的保健食品,它含有多种氨基酸、丰富的维生素以及人体不可缺少的微量元素,具有很高的营养价值.利用火焰原子吸收光谱法对鲜香菇中的九种微量元素进行了含量测定.结果表示九种微量元素的加标回收率为96%—104%,RSD为0.8%—3.9%.操作方便,分析速度快,结果准确.Lentinus edodes is high protein and low fat sanitarian food. It contains multi-amino acid and abundant vitamin as well as indispensable microelements in human. It has higher nutritional value. In this paper, the nine track elements of Lentinus edodes were determined by FAAS. The recoveries of standard addition of the six elements are in the range of 96-104% with relative standard deviation of 0.8-3.9%. The method is simple, efficient and accurate.
