摘 要:以草石蚕为材料,采用单因素和正交试验研究提取时间、提取温度、固液比对水苏糖得率的影响,并确定提取水苏糖的最佳工艺条件。结果表明,各因素对水苏糖得率的影响由大到小依次为固液比>提取时间>提取温度,当提取时间60 min,提取温度40℃,固液比1∶15时,水苏糖得率最高,此条件下水苏糖得率是45.17%。With Chinese artichoke as the material,the single factor and orthogonal experiment were taken to study the effects of extraction time,extraction temperature,ratio of solid to liquid on extraction rate of stachyose.And determine the optimum conditions of extracting stachyose.The results showed that the effects of all factors on extraction rate of stachyose from big to small in order was ratio of solid to liquidextraction time extraction temperature.Extraction rate of stachyose was the highest when extraction time was 60 min,extraction temperature was 40 ℃,ratio of solid to liquid was 1∶15.Under the conditions,extraction rate of stachyose was 45.17 %.
